The key growing regions (Bohol, Leyte, and Aurora) share this volcanic and fertile terroir, combined with the monsoon climate that delivers 1,500–2,500 mm of annual rainfall timed to the ube growing cycle. The mineral composition of the soil directly influences anthocyanin production: manganese activates the enzymes in the biosynthesis pathway, while potassium drives the tuber bulking that concentrates these pigments.

Ube is propagated vegetatively, not from seed, but from vine cuttings or tuber sections taken from the previous season's harvest. This ensures genetic consistency: every Heritage Reserve tuber traces back to the same heirloom cultivar through generations of careful selection.
Planting begins at the onset of the wet season, typically May to June, when the first monsoon rains soften the soil and provide the moisture vine cuttings need to establish roots. Farmers prepare mounded soil beds, raised rows that ensure drainage during heavy rains while retaining enough moisture for steady growth. Cuttings are spaced approximately one meter apart, giving each plant room to develop its underground tuber system without competition.
Bamboo trellises are erected for the vines to climb. Ube is a climbing yam, and its heart-shaped leaves and vigorous vines need vertical support to maximize photosynthesis. The trellises are built from locally harvested bamboo, lashed together by hand. Every step of the planting process is done manually. There are no tractors, no mechanical planters. Filipino ube farming is hand labor from start to finish.

Growing: 8 months of patience and care
Once planted, the vine emerges within 2–3 weeks. Heart-shaped leaves unfurl and the vine begins its climb up the bamboo trellis, reaching 3–5 meters over the growing season. During these months, the above-ground vine is manufacturing the sugars and starches that will be stored underground in the tuber.
Farmers maintain the crop through hand weeding, pest monitoring, and moisture management. Weeds compete for nutrients in the mineral-rich volcanic soil, so regular clearing is essential. Common pests include yam beetles and vine borers, which farmers manage through cultural practices (crop rotation, companion planting, and manual removal) rather than heavy pesticide use.
The full growing period is 8–10 months for most commercial cultivars. Heirloom varieties like Kinampay can take up to 12 months to reach peak maturity, which is one reason Heritage Reserve commands a premium because it ties up farmland for an entire year. This timeline cannot be meaningfully accelerated. Growth hormones and excess fertilizer produce larger vines but not better tubers. The anthocyanin pigments that create ube's signature purple develop slowly as the tuber matures, concentrating during the final 2–3 months.

Harvest: manual excavation, October through February
Harvest peaks during the dry months, October through February, when the soil is easier to work and the tubers have reached full maturity. The vine begins to yellow and die back naturally, signaling that the plant has redirected all its energy into the underground tuber.
Harvesting ube is entirely manual. Farmers use hand tools, a sharpened bolo (machete) and a pointed digging stick, to carefully excavate tubers from the mounded soil. The tubers grow vertically, sometimes reaching 30–50 cm deep, and must be removed without nicking the skin, which causes rapid browning and reduces shelf life. A single plant typically produces tubers weighing 1–5 kg, depending on cultivar, soil conditions, and growing time.
Tubers are graded on-farm immediately after harvest. Grading considers size, color intensity (assessed visually by experienced farmers who can judge anthocyanin content by the depth of purple at the cut surface), shape regularity, and skin condition. Grade A tubers are set aside for Heritage Reserve processing. Grade B goes to Ani production. Grade C (smaller tubers, cosmetically damaged, or lighter in color) is directed to paste and extract processing where appearance is less critical.

Processing: powder, paste, and full ingredient transparency
After harvest, ube is processed into two primary export forms: powder and paste. Both begin with the same raw tubers but follow different processing paths. Neither uses artificial colors, artificial flavors, or preservatives — and where a process uses a food-grade carrier, we state it plainly rather than hide it.
Ube powder production
The two grades follow different paths. Our Ani powder is spray-dried: the ube is cooked down and dried with a food-grade maltodextrin carrier into a free-flowing powder at 100-120 mesh, giving consistent color and full solubility batch to batch. We disclose that carrier on every spec sheet. Heritage Reserve is produced by a different method tuned to protect its color and aroma, and is milled to order: 100 mesh standard fine dissolves with no grittiness, while the 30 mesh coarse grind is left deliberately larger so the ube stays visible as flecks in a finished bake. Neither powder uses purple sweet potato or artificial color, and any spray-drying carrier is always stated — never hidden as bulking filler.
Ube paste (halaya) production
Tubers are boiled until soft, then mashed and cooked slowly with coconut milk in large vats, stirred continuously for 2–3 hours. Traditional halaya recipes use only ube, coconut milk, and a controlled amount of sugar. The extended cooking concentrates flavors and creates the dense, jam-like texture that makes halaya versatile as a filling, spread, or ingredient base. No artificial colors or preservatives are added.

Fresh tubers require cold chain management. They are packed in ventilated wooden or plastic crates and transported in temperature-controlled containers at 12–16°C with 85% relative humidity. Shelf life is limited to 2–4 weeks, making fresh export viable only for nearby markets or air freight to premium buyers.
Powder and paste export
Powder and paste ship at ambient temperature, making them far more practical for international trade. Ube powder in moisture-barrier, multi-layer foil-lined bags has a shelf life of 12–24 months. Ube paste in sealed containers lasts 3–6 months. Both can travel by sea freight without refrigeration, significantly reducing shipping costs.
