Two Grades, One Standard: Real Ube
Like ceremonial and culinary matcha, we grade our ube powder so you know exactly what you're getting. Both grades are real Dioscorea alata — never purple sweet potato. They differ in fineness, intensity, processing, and intended use.
Both grades carry the Tatak Ube certification mark, which lets you verify the license, origin, and ube solids of any pack against the public register. Heritage Reserve is certified Tatak Ube Pure Philippine Ube; Ani is certified Tatak Ube Blend.
Heritage Reserve
Heirloom Kinampay cultivar or other prized single varieties, with deep natural color and aroma. Two standard grinds: 30 mesh coarse, for visible ube flecks in baked goods, and 100 mesh standard fine, where the ube should disappear into the crumb. For artisan bakeries, premium ice cream, and fine dining. Finer grinds up to 320 mesh are available for cosmetics, and anything in between is milled to your spec.

Is your ube powder organic?
Our ube powder is made from real Dioscorea alata sourced from farming families across the Philippines — never purple sweet potato — with no artificial colors. Our Ani grade is spray-dried with a food-grade maltodextrin carrier, which we disclose on every spec sheet. Many of our partner farms use organic practices — no synthetic pesticides, no chemical fertilizers — though we do not currently hold formal organic certification. Formal certification is on our roadmap as we scale.
What can I use ube powder for?
Ube powder is incredibly versatile. Popular uses include ube lattes, ube ice cream, ube cake, ube pandesal, ube ensaymada, smoothie bowls, confectionery, and as a natural food colorant. Both our Heritage Reserve and Ani grades dissolve well in liquids and batters.
Is this real ube or purple sweet potato?
This is real ube (Dioscorea alata), the true Philippine purple yam — never purple sweet potato. Many products sold as 'ube powder' on Amazon and other marketplaces are actually purple sweet potato (Ipomoea batatas), which is a completely different plant with a different flavor profile. Our ube is sourced directly from farms in the Philippines, and where our Ani grade uses a spray-drying carrier we disclose it in full.
