What Makes Real Ube Halaya Different
Most commercial ube halaya uses purple sweet potato, artificial colors, and preservatives. It looks like ube halaya, but it doesn't taste like it. The flavor is flat, the color is synthetic, and the connection to the Philippines is absent.
Real ube halaya starts with real ube (Dioscorea alata, not Ipomoea batatas). It's hours of slow cooking: grating the tubers, combining with coconut milk, stirring over low heat until the mixture thickens into something dense, fragrant, and deeply purple. The process is labor-intensive because the result is worth it.
Our ube halaya will be made from the same farm-traceable Philippine ube we sell as powder. Same farms, same families, same quality standard. The only difference is that we do the cooking for you. What is ube halaya?
Ube halaya is a traditional Filipino purple yam jam made by grating real ube (Dioscorea alata), cooking it slowly with coconut milk and dairy, and reducing the mixture until it thickens into a dense, glossy, deeply purple preserve. It is a staple of Filipino desserts — eaten on its own, used as a pastry filling, spread on pandesal, or folded into halo-halo. Real halaya uses ube, not purple sweet potato.
When will Philippine Ube's ube halaya launch?
Our ube halaya line is in development. We have not announced a launch date because we are deliberately working through farm supply, kitchen process, shelf life, and packaging decisions with the input of the buyers registering interest on this page. How is real ube halaya different from imitation versions?
Most commercial halaya sold under Filipino brand names uses purple sweet potato (Ipomoea batatas) plus synthetic purple colouring, because real ube is expensive and seasonal. The imitation versions look right but taste flat — ube's distinctive nutty, vanilla-adjacent flavour simply isn't there. Our halaya will start from 100% Dioscorea alata from our partner farms. What formats will the halaya be available in?
We are evaluating retail jars (250g and 500g), 1 kg catering jars, bulk tubs for bakeries and foodservice (5 kg+), and single-serve sachets. The form-factor mix will be informed by the quantities and use cases registered through this interest form. Private-label and white-label arrangements are likely to be available alongside the Philippine Ube retail line.
What will the shelf life be?
Traditional ube halaya made with a high sugar-to-ube ratio has a refrigerated shelf life of 2–4 weeks. Our commercial format will target 3–6 months refrigerated for the core ingredient grade, with a shelf-stable retort-processed variant at 6–12 months for bakery and foodservice use. Exact shelf life will depend on the final formulation, packaging, and whether preservatives or retort processing are used.
Can I order samples before launch?
Not yet — the product is still in development. Once pilot batches are ready we will contact interest-registered buyers in order, prioritising those with use cases and quantities that match our first production run. In the meantime you can work with our ube powder, which is available now and is the same farm-traceable material the halaya will be built from.
