Watch out for purple sweet potato mislabelling
Many products labelled "ube" actually contain purple sweet potato (Ipomoea batatas), which is a completely different species from true Philippine ube (Dioscorea alata). Purple sweet potato is cheaper and more widely available, but it has a different flavor profile, lower anthocyanin content, and does not carry the same culinary heritage. Always verify the species on the ingredient label.

Buyer's checklist: how to verify real ube
Check the species
The label should specify Dioscorea alata. If it says Ipomoea batatas, it is purple sweet potato, not ube.
Check for synthetic dyes
Real ube products get their color from anthocyanin pigments. If FD&C Red No. 40 or Blue No. 1 appear on the label, the color is artificial.
Check the ingredient count
Genuine ube powder should have one ingredient. Extracts should list ube as the first ingredient. Flavorings typically have 5+ ingredients.
Check the origin
Authentic ube (Dioscorea alata) is primarily grown in the Philippines. Philippine origin is a strong indicator of genuine product.

Fresh tubers: chilling injury warning
Fresh ube tubers must be stored at 12-16°C with 85-90% relative humidity. Storing below 10°C causes chilling injury, leading to internal browning, texture breakdown, and accelerated spoilage. Standard refrigerators (2-5°C) are too cold for fresh ube. A cool, dark pantry or temperature-controlled storage room is ideal.
Frozen ube: blanching is mandatory
Always blanch fresh ube for 3-5 minutes before freezing. Blanching deactivates enzymes that degrade color, flavor, and texture during frozen storage. After blanching, cool rapidly in ice water, drain thoroughly, vacuum-seal, and store at -18°C or below. Properly blanched and vacuum-sealed ube maintains quality for 6-12 months.
Powder: moisture is the enemy
Ube powder is hygroscopic, meaning it actively absorbs moisture from the air. Store in airtight, moisture-barrier packaging below 25°C and below 60% relative humidity. Sealed powder lasts 12-24 months; once opened, use within 3-6 months. Always reseal immediately after use and avoid introducing moisture (do not use wet scoops).
Halaya (ube jam): varies by preparation
Low-sugar homemade halaya lasts 2-3 days at room temperature or 5-7 days refrigerated. Traditional high-sugar halaya can last 2-4 weeks refrigerated. Frozen halaya maintains quality for 2-3 months. Commercial halaya with preservatives achieves 6-12 months shelf life. Always check for signs of spoilage: sour smell, mold, or fermented taste.

United States: FSMA and FSVP
